Flavour Profile 

The meat is firm and white with a mild, slightly sweet, almost nutty flavor. Small fried squid are often firm and chewy, but they should not be rubbery.

Habitat

They are found on the continental shelf.

Appreance

Fresh squids are pale reddish-brown with numerous brown colored chromatophores scattered all over the dorsal and ventral mantle, head, arms, and fins.

Size

On average, squids are 50 to 150 grams in weight. However other sizes are also occasionally available.

Cooking Preferences

Squids can be used in paella, risotto, soups, and pasta. You can also have lulas, grilled whole kebabs of squid rings with bell peppers, and onions. Fresh squids can also be served deep-fried, then wrapped with mustard or chili sauce in lettuce leaves.
