Usually consumed whole and loved by the Southeast Asian community of Pakistan, White Sardine – Mittu has yet to make inroads to the kitchen of the local consumers.
Flavor Profile
White Sardine is considered one of the tastiest small fish due to its distinctly soft oily texture, mouthwatering flavor, and superb mouthfeel.
Habitat
White Sardines are sea fish and are usually found in coastal and pelagic areas. They travel in the form of large schools.
Physical Attributes
White Sardines don’t have visible scales on the body. The body is Small, moderately compressed and the snout is very short and blunt. The top jaw is short, not extending beyond the front edge of the preoperculum, with a blunt tip.
Colour
White Sardines are white to pale gray. The body has a prominent white strap starting from the eye to the tail. The inner edges of the caudal fin are slightly darkish.
Cutting Preferences
White Sardines are preferred as a whole (uncleaned). With a very small size, there is not much cutting possible.
